📢 Message from the Head of Kitchen and Catering Department

The Kitchen and Catering Department at Kuja Special School for the Deaf is dedicated to ensuring that every learner receives safe, nutritious, and well-prepared meals every day. We recognize that proper nutrition is essential for the health, growth, and academic success of our learners, particularly those with special educational needs. Our department works tirelessly to provide quality meals that support the physical and mental well-being of every child entrusted to our care.

Our kitchen staff demonstrate remarkable teamwork and dedication in carrying out their daily responsibilities. They continuously learn from one another by sharing cooking techniques, improving food preparation methods, and embracing teamwork to ensure that meals are prepared efficiently. Preparing food for a large number of learners, especially cooking large quantities of staple foods such as ugali, requires skill, patience, and commitment. Despite the demanding nature of their work, our cooks remain passionate about serving our learners with dignity and care.

🔥 Challenges We Face

However, the department faces several challenges that affect the efficiency of food preparation and service delivery. One of the major challenges is the continued dependence on unseasoned firewood, which produces excessive smoke, burns inefficiently, and slows the cooking process. The use of wet firewood not only increases fuel consumption but also creates an uncomfortable working environment for our kitchen staff.

🍲 Equipment Shortage

The kitchen also lacks sufficient modern cooking equipment and utensils to meet the growing needs of the school. At present, only one large cooking pot is fully functional, making it difficult to prepare meals on time for the increasing student population. Additional large-capacity cooking pots are urgently needed to improve efficiency, reduce delays, and ensure that all learners receive their meals promptly.

🛡️ Safety and Hygiene Concerns

Safety and hygiene are equally important concerns within the department. The kitchen has a limited number of protective aprons for staff, reducing the level of personal protection during food preparation. Furthermore, the gas exhaust pipes require replacement with larger and more efficient ones to improve ventilation and ensure a safer cooking environment. Proper ventilation is essential for maintaining the health and safety of kitchen personnel.

🏗️ Infrastructure Needs

The kitchen infrastructure also requires urgent improvement. Some windows are not properly installed, reducing adequate ventilation and security, while sections of the roof leak during the rainy season. These leakages disrupt food preparation, expose equipment to damage, and create an unsafe working environment. Renovating the kitchen building would greatly improve hygiene, efficiency, and the overall quality of service provided to our learners.

💰 Call for Support

As the school continues to grow, the operational budget allocated to the Kitchen and Catering Department needs to be enhanced to meet the increasing demand for food, cooking fuel, equipment maintenance, utensils, and kitchen improvements. Increased investment in the department will enable us to provide better services, improve food quality, and maintain high standards of nutrition, hygiene, and safety for all learners.

Despite these challenges, the Kitchen and Catering Department remains committed to serving every learner with dedication, professionalism, and compassion. We sincerely appreciate the support of the school administration, parents, government agencies, well-wishers, and development partners who continue to stand with us.
